Ingredients

2 boneless skinless chicken breasts

1 sheet puff pastry thawed

1 tablespoon olive oil

2 tablespoons butter

2 cloves garlic minced

1 cup mushrooms finely chopped (optional)

2 tablespoons all-purpose flour

1 cup whole milk or cream

1 teaspoon Dijon mustard

1 egg beaten (for egg wash)

Salt and black pepper to taste

1 tablespoon chopped fresh parsley (for garnish)


Instructions

1. Season chicken breasts with salt and pepper.

2. Heat olive oil in a skillet and sear chicken on both sides until golden, about 2–3 minutes per side.

3. Remove chicken and let it cool slightly.

4. In the same pan, melt butter and sauté garlic (and mushrooms if using) for 2–3 minutes.

5. Stir in flour and cook for 1 minute, then slowly whisk in milk or cream until smooth.

6. Add Dijon mustard, salt, and pepper, then simmer until thickened.

7. Roll out puff pastry and cut into two rectangles.

8. Spoon some sauce in the center of each piece of pastry, place a chicken breast on top, and add more sauce.

9. Fold pastry over the chicken, sealing edges tightly and placing seam-side down on a lined baking sheet.

10. Brush tops with beaten egg and cut a small slit for steam to escape.

11. Bake at 400°F (200°C) for 25–30 minutes until pastry is golden and chicken reaches 165°F internal temp.

12. Garnish with fresh parsley and serve warm.

Notes

Make sure puff pastry is cold when wrapping or it may tear.

Let chicken cool before wrapping to avoid soggy pastry.

Use parchment paper on a metal sheet pan for the crispiest bottom.
