Ingredients

1 1/2 pounds boneless skinless chicken thighs, cut into bite-sized pieces

2 tablespoons oil or ghee

1 large yellow onion, finely chopped

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 cup crushed tomatoes

3/4 cup plain full-fat yogurt, room temperature

1 1/2 teaspoons paprika

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon turmeric

1 teaspoon garam masala

1/4 teaspoon cayenne pepper

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh cilantro

Cooked basmati rice, for serving

Warm naan, for serving


Instructions

1. Heat the oil or ghee in a large skillet or Dutch oven over medium heat. Add the chopped onion and cook for 8 to 10 minutes until soft and lightly golden.

2. Stir in the garlic and ginger and cook for 30 seconds until fragrant.

3. Add the paprika, cumin, coriander, turmeric, garam masala, cayenne, salt, and black pepper. Stir for 30 seconds to bloom the spices.

4. Add the crushed tomatoes and cook for 3 to 4 minutes, stirring often, until the mixture thickens slightly and smells rich.

5. Add the chicken pieces and stir well so they are fully coated in the spiced tomato mixture. Cook for 4 to 5 minutes.

6. Reduce the heat to low. Stir in the yogurt a little at a time until the sauce is smooth and well combined.

7. Cover and simmer gently for 15 to 20 minutes, stirring occasionally, until the chicken is tender and cooked through.

8. Taste and adjust salt if needed. Sprinkle with chopped cilantro and serve hot with basmati rice and warm naan.

Notes

Use room-temperature yogurt and add it slowly so the sauce stays smooth and does not split.

Chicken thighs give the best flavor and stay tender, but chicken breast can work if you reduce the simmer time slightly.

This curry tastes even better the next day, so it is a great make-ahead dinner for busy nights.
