Ingredients

1.5 pounds boneless skinless chicken thighs

2 medium sweet potatoes peeled and diced

1 red bell pepper chopped

1 small red onion chopped

2 cloves garlic minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

2 tablespoons chopped fresh parsley


Instructions

1. Heat olive oil in a large skillet over medium-high heat.

2. Season chicken thighs with salt, pepper, half the smoked paprika, and cumin.

3. Sear chicken in skillet until golden brown on both sides and nearly cooked through, then remove and set aside.

4. In the same skillet, add diced sweet potatoes and cook until tender and browned, stirring occasionally.

5. Add red onion, bell pepper, and garlic to skillet with sweet potatoes, then season with remaining paprika and cumin.

6. Cook until vegetables are softened and spices are fragrant.

7. Return chicken to skillet and cook everything together for 5 more minutes until chicken is fully cooked.

8. Sprinkle with fresh parsley before serving.
