Ingredients
2 large ripe bananas
1/2 cup brown sugar
1/3 cup neutral oil
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups rolled oats
1/2 cup chocolate chips or chopped walnuts (optional)
Instructions
1. In a large mixing bowl, mash 2 large ripe bananas until smooth.
2. Add brown sugar, neutral oil, egg, and vanilla extract. Whisk until well combined.
3. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
4. Stir dry ingredients into the wet mixture until just combined.
5. Fold in rolled oats and optional chocolate chips or walnuts.
6. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
7. Scoop dough into 2-tablespoon mounds and place 2 inches apart.
8. Bake for 11–13 minutes until edges are golden and centers are set.
9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
Use overripe bananas for the best flavor and texture.
Rolled oats work best — avoid instant or steel-cut oats.
Add nuts or chocolate for extra richness or texture, or leave them out for a simpler version.
