Instructions

1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper; lightly brush the paper with olive oil.

2. Finely shred the zucchini, then place it in a clean kitchen towel and squeeze out as much moisture as possible until it feels dry.

3. In a large bowl, combine the shredded zucchini, eggs, 3/4 cup of the mozzarella, 1/4 cup of the Parmesan, flour, garlic, Italian seasoning, salt, black pepper, and red pepper flakes if using.

4. Stir the mixture until a thick, sticky dough forms and everything is evenly combined.
