Ingredients

4 cups frozen tater tots

1 tablespoon olive oil

1 pound ground beef

1 small yellow onion finely chopped

2 cloves garlic minced

2 tablespoons taco seasoning

1/3 cup water

1 can refried beans 15 ounces

2 tablespoons sour cream

1/4 cup salsa plus more for serving

2 cups shredded cheddar or Mexican blend cheese

1/4 cup chopped green onions

2 tablespoons chopped pickled jalapeños optional

6 large flour tortillas 10 inch size

2 tablespoons butter or vegetable oil for pan searing

1/2 teaspoon salt or to taste

1/4 teaspoon black pepper

1/2 cup sour cream for serving optional

1/2 cup pico de gallo or chopped tomatoes for serving optional

Hot sauce for serving optional

Instructions

1. Preheat the oven according to the directions on the tater tot package, usually around 425°F or 220°C.

2. Place the frozen tater tots on a baking sheet and drizzle with olive oil, tossing to coat and spreading them in a single layer.

3. Bake the tater tots until deeply golden and very crisp, adding a few extra minutes beyond package directions if needed and flipping once halfway through baking.

4. While the tater tots bake, heat a large skillet over medium high heat and add the ground beef, cooking until browned and no longer pink.

5. Drain any excess grease from the skillet, then add the chopped onion and cook until softened and lightly golden.

6. Stir in the minced garlic and cook for about 30 seconds until fragrant.

7. Sprinkle the taco seasoning over the beef mixture, pour in the water, and stir well, letting the mixture simmer for 2 to 3 minutes until the liquid reduces and the beef is coated in a thick sauce.

8. In a small saucepan or microwave safe bowl, warm the refried beans until soft and spreadable.

9. Stir the sour cream and salsa into the warm beans until smooth and creamy, then season the mixture with salt and pepper to taste.

10. Warm the flour tortillas in a dry skillet, microwave, or low oven just until soft and pliable so they do not crack when rolled.

11. Lay one warm tortilla on a flat surface and spread a line of the creamy bean mixture down the center, leaving space at the sides for folding.

12. Spoon some of the seasoned beef mixture over the beans, spreading it in an even line.

13. Add a row of crispy tater tots on top of the beef, then sprinkle generously with shredded cheese.

14. Top with a small spoonful of salsa, a sprinkle of green onions, and a few pickled jalapeños if desired.

15. Fold the sides of the tortilla inward over the filling, then roll it up tightly from the bottom to form a burrito.

16. Repeat the filling and rolling process with the remaining tortillas and filling ingredients.

17. Heat the butter or vegetable oil in a large skillet over medium heat.

18. Place the burritos seam side down in the hot skillet and cook until the bottoms are golden and crisp.

19. Carefully flip the burritos and toast the other side, and the edges if desired, until the tortillas are lightly browned all over and the cheese inside is melted.

20. Transfer the hot burritos to plates and serve immediately with extra salsa, sour cream, pico de gallo, and hot sauce on the side.

Notes

For extra crispy tater tots inside the burrito, slightly over bake them so they are deeply golden before assembling.

Warming the tortillas before filling makes them more flexible and helps prevent tearing when you roll the burritos.

To meal prep, assemble the burritos, let them cool, then wrap and freeze; reheat in a skillet or air fryer to bring back the crisp texture.
