Ingredients

12 ounces rigatoni pasta

1 tablespoon olive oil

2 cloves garlic, minced

1 tablespoon fresh sage, chopped (plus extra leaves for garnish)

1 cup pumpkin puree

1 cup tomato sauce

1 teaspoon salt

1/2 teaspoon black pepper

1 1/2 cups shredded mozzarella cheese

1/2 cup grated parmesan cheese

1/2 cup chopped toasted walnuts


Instructions

1. Boil the rigatoni in salted water, cooking 1-2 minutes less than the package directions. Drain and set aside.

2. Heat olive oil in a saucepan, then sauté garlic and sage until fragrant.
