Ingredients

1 unbaked 9-inch pie crust

2 tablespoons butter

1 tablespoon olive oil

3 large Vidalia onions, thinly sliced

3 large eggs

1 cup sour cream

2 cups shredded sharp cheddar cheese

2 tablespoons all-purpose flour

1 teaspoon fresh thyme leaves

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Preheat the oven to 375F and fit the pie crust into a 9-inch pie dish. Set it aside.

2. Heat the butter and olive oil in a large skillet over medium heat. Add the sliced Vidalia onions and cook slowly for 15 to 20 minutes, stirring often, until very soft and lightly golden. Remove from the heat and let them cool slightly.

3. In a large bowl, whisk together the eggs, sour cream, flour, thyme, salt, and black pepper until smooth.

4. Stir in the cooked onions, 1 1/2 cups of the shredded cheddar cheese, and the chopped parsley. Mix until evenly combined.
