Ingredients
1 medium head cauliflower, cut into small florets
2 tablespoons olive oil
1 1/2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
8 small corn tortillas
2 cups shredded cabbage
1 avocado, sliced
1/4 cup thinly sliced red onion
1/4 cup crumbled cotija cheese
lime wedges, for serving
1/2 cup sour cream
2 tablespoons mayonnaise
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
1 teaspoon lime zest
1 small garlic clove, grated
1/4 teaspoon salt
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
2. In a large bowl, toss the cauliflower with olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
3. Spread the cauliflower on the baking sheet in a single layer and roast for 25 to 30 minutes, flipping halfway through, until tender and golden at the edges.
4. While the cauliflower roasts, make the crema by mixing the sour cream, mayonnaise, cilantro, lime juice, lime zest, garlic, and salt in a small bowl until smooth.
5. Warm the tortillas in a dry skillet or directly over a flame for a few seconds per side until soft and pliable.
6. Fill each tortilla with roasted cauliflower, shredded cabbage, avocado, and red onion.
7. Drizzle with cilantro lime crema and finish with cotija cheese and lime wedges on the side.
8. Serve immediately while the cauliflower is warm and the toppings are fresh.
Notes
Roast the cauliflower in a single layer so it browns instead of steaming.
Warm the tortillas right before serving so they stay soft and fold easily.
Store the cauliflower and crema separately for the best texture when reheating leftovers.
