1 large head cauliflower, cut into bite-sized florets

3 tablespoons olive oil, divided

1 ½ teaspoons ground coriander

1 teaspoon ground turmeric

½ teaspoon ground cinnamon

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon cayenne pepper

¾ teaspoon fine sea salt, plus more to taste

¼ teaspoon black pepper

3 cups cooked rice or quinoa

1 cup cherry tomatoes, halved

1 cup diced cucumber

¼ cup thinly sliced red onion

¼ cup chopped fresh parsley

1 lemon, cut into wedges

1 small garlic clove, minced

3 tablespoons fresh lemon juice

3–4 tablespoons warm water, plus more as needed

1 tablespoon olive oil (for the sauce)

Pinch of salt (for the sauce)


Instructions

1. Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment paper or lightly grease it with olive oil.

2. Add the cauliflower florets and chickpeas to a large mixing bowl and drizzle with 2 tablespoons of olive oil.

3. Sprinkle the cumin, coriander, smoked paprika, turmeric, cinnamon, garlic powder, onion powder, cayenne, salt, and black pepper over the cauliflower and chickpeas.

4. Toss very well until all the cauliflower and chickpeas are evenly coated in the oil and spices.

5. Spread the seasoned cauliflower and chickpeas in a single layer on the prepared sheet pan, leaving a little space between pieces.

6. Roast for 20–25 minutes, stirring once halfway through, until the cauliflower is tender with browned edges and the chickpeas are lightly crisped.

7. While the vegetables roast, prepare the rice or quinoa according to package directions if it is not already cooked, then fluff with a fork and keep warm.

8. Prepare the fresh toppings by halving the cherry tomatoes, dicing the cucumber, thinly slicing the red onion, and chopping the fresh parsley.

9. To make the lemon-tahini sauce, add the tahini, minced garlic, lemon juice, 1 tablespoon olive oil, pinch of salt, and 3 tablespoons warm water to a small bowl or measuring cup.

10. Whisk until smooth and creamy, adding more warm water a little at a time until the sauce is thick but drizzleable.

11. Taste the sauce and adjust seasoning with extra lemon juice or salt as desired.

12. When the cauliflower and chickpeas are done roasting, remove the sheet pan from the oven and let them cool for a minute or two.

13. To assemble each bowl, add a generous scoop of warm rice or quinoa to the bottom of a serving bowl.

14. Top with a large spoonful of roasted cauliflower and chickpeas.

15. Arrange cherry tomatoes, cucumber, and red onion around the bowl.

16. Drizzle the lemon-tahini sauce over the cauliflower, chickpeas, and vegetables.

17. Sprinkle with chopped fresh parsley.

18. Add a lemon wedge to each bowl for squeezing just before serving.

19. Serve immediately while the cauliflower is warm and the vegetables are crisp.
