Ingredients

3 1/2 cups all-purpose flour

1 cup whole milk, warm

1 packet instant yeast (2 1/4 tsp)

2 tablespoons sugar

2 large eggs

4 tablespoons unsalted butter, melted

1 teaspoon salt

2 large yellow onions, thinly sliced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon dried thyme

1 1/2 cups grated Gruyère cheese

1/2 cup shredded mozzarella cheese

1 egg (for egg wash)


Instructions

1. Warm milk and mix with sugar and yeast. Let it sit until foamy.

2. Add eggs and melted butter. Stir in flour and salt, and knead until dough is soft and elastic.

3. Cover and let rise until doubled, about 1 hour.

4. In a pan, cook onions in olive oil over low heat for 40–50 minutes, stirring often.

5. Add balsamic vinegar and thyme in the last 5 minutes of cooking. Let onions cool.

6. Roll out the dough into a large rectangle. Spread onions evenly, then sprinkle cheeses.

7. Roll tightly into a log. Slice lengthwise and twist both halves together, cut side up.

8. Shape into a wreath and place on a parchment-lined baking sheet.

9. Brush with egg wash and bake at 375°F for 25–30 minutes until golden.

10. Cool slightly, then slice and serve warm.

Notes

Don’t rush the onion caramelizing process—it brings all the flavor.

Make sure the filling is fully cooled before rolling to avoid tearing the dough.
