Ingredients

2 large yellow onions, thinly sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon fresh thyme leaves

1 cup Gruyere cheese, shredded

8 ounces cream cheese, softened

1/2 cup sour cream

1/4 cup mayonnaise

1/2 teaspoon salt

1/4 teaspoon ground black pepper


Instructions

1. In a large skillet, melt butter and olive oil over medium heat. Add sliced onions and cook for 30-40 minutes, stirring occasionally until deeply golden and caramelized.

2. During the last 5 minutes of cooking, stir in minced garlic and thyme. Remove from heat and let cool slightly.

3. In a mixing bowl, combine cream cheese, sour cream, mayonnaise, and half the Gruyere cheese. Mix until smooth.

4. Fold the cooled caramelized onions into the cheese mixture. Season with salt and black pepper.

5. Transfer to a small baking dish. Top with remaining Gruyere.

6. Bake at 375°F (190°C) for 20–25 minutes until hot, bubbly, and golden on top.

7. Serve warm with toasted bread, crackers, or veggie sticks.

Notes

This dip is best served warm straight from the oven.

You can prepare it ahead of time and bake just before serving.

Shred your own cheese for best melting results—pre-shredded can affect texture.
