Description
This Cajun Meatball Stew is a bold, cozy dinner idea made with tender beef meatballs, a rich Cajun-style brown gravy, and the classic flavor of onion, bell pepper, celery, garlic, and warm spices. It is an easy recipe for family dinners, comfort food nights, meal prep, and hearty food ideas when you want something saucy, filling, and deeply satisfying over rice.
Ingredients
1 1/2 pounds ground beef
1/2 cup plain breadcrumbs
1 large egg
1/2 cup finely chopped onion
3 cloves garlic, minced
2 teaspoons Cajun seasoning
1 teaspoon smoked paprika
1 tablespoon Worcestershire sauce
2 tablespoons chopped fresh parsley
1 teaspoon salt
1/2 teaspoon black pepper
1/3 cup vegetable oil, divided
1/3 cup all-purpose flour
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped celery
3 cups beef broth
1 bay leaf
1 tablespoon chopped fresh parsley for garnish
6 cups cooked white rice for serving
Instructions
1. Add ground beef, breadcrumbs, egg, finely chopped onion, garlic, Cajun seasoning, smoked paprika, Worcestershire sauce, parsley, salt, and black pepper to a large bowl. Mix gently until combined.
2. Shape the mixture into medium meatballs, about the size of a golf ball.
3. Heat part of the vegetable oil in a Dutch oven or heavy pot over medium heat. Brown the meatballs in batches on all sides, then transfer them to a plate.
4. Add the remaining oil to the same pot. Stir in the flour and cook, stirring constantly, until the roux becomes medium brown and smells nutty.
5. Add chopped onion, bell pepper, and celery. Cook until softened, then stir in the garlic for about 30 seconds.
6. Slowly pour in the beef broth while stirring to create a smooth gravy. Add the bay leaf and adjust seasoning if needed.
7. Return the meatballs to the pot. Cover and simmer gently for 30 to 35 minutes, until the meatballs are cooked through and the gravy has thickened.
8. Remove the bay leaf, garnish with parsley, and serve hot over cooked white rice.
Notes
Do not rush the roux. Stir it constantly and let it reach a medium brown color for the best deep gravy flavor.
Brown the meatballs in batches so they sear instead of steam. This adds more flavor to the stew.
If the gravy gets too thick while simmering, add a splash of beef broth or water until it reaches your preferred consistency.
