Ingredients
4 cups peeled and cubed butternut squash
1 tablespoon olive oil
1 pound Italian sausage
1 cup chopped yellow onion
1/2 cup chopped celery
1 1/2 cups shredded Gruyère or white cheddar cheese
1 teaspoon salt
1/2 teaspoon black pepper
8–10 fresh sage leaves
Extra olive oil for frying sage
Instructions
1. Preheat oven to 400°F and roast butternut squash tossed in olive oil, salt, and pepper for 25 minutes until tender and golden.
2. In a skillet, sauté onion and celery in olive oil until soft. Add sausage, cook until browned and fully done.
3. In a mixing bowl, combine roasted squash, sausage mixture, and half the cheese.
4. Transfer to a greased baking dish and top with remaining cheese.
5. Bake at 375°F for 20-25 minutes until hot and bubbly.
6. Fry sage leaves in olive oil until crisp. Drain on paper towels.
