Ingredients

3 blood oranges, peeled and segmented (one juiced for dressing)

2 ripe avocados, sliced

5 cups mixed salad greens

1 small fennel bulb, thinly shaved

0.25 small red onion, very thinly sliced

0.33 cup pomegranate arils

0.25 cup chopped pistachios

0.25 cup crumbled feta cheese

3 tablespoons extra-virgin olive oil

2 tablespoons fresh blood orange juice

1 tablespoon lemon juice

1.5 teaspoons honey

0.5 teaspoon Dijon mustard

0.5 teaspoon fine sea salt

0.25 teaspoon freshly ground black pepper


Instructions

1. Segment the blood oranges by cutting off the top and bottom, trimming away the peel and pith, then slicing into rounds or cutting between the membranes to create neat segments. Squeeze any leftover membranes to collect extra juice for the dressing.

2. Make the citrus vinaigrette by whisking together the fresh blood orange juice, lemon juice, extra-virgin olive oil, honey, Dijon mustard, salt, and pepper in a small bowl or jar until smooth and emulsified. Adjust sweetness or acidity to taste.

3. Build the salad base by adding the mixed salad greens to a large serving bowl or platter. Top with the thinly shaved fennel and very thin slices of red onion, spreading them evenly over the greens.

4. Arrange the blood orange segments over the greens so they are evenly distributed. Slice the avocados and gently fan the slices across the salad so each serving will have some avocado.

5. Add pomegranate arils and sprinkle the chopped pistachios over the salad for sweetness and crunch. Crumble the feta cheese on top for a creamy, salty finish.
