Ingredients
1 cup Biscoff spread
1 quart vanilla ice cream, slightly softened
2 tablespoons heavy cream
1 teaspoon vanilla extract
1 pinch salt
16 Biscoff cookies
1/2 cup crushed Biscoff cookies
Instructions
1. Let the vanilla ice cream sit at room temperature for 10 to 15 minutes until softened but not melted.
2. In a large bowl, stir together the softened ice cream, Biscoff spread, heavy cream, vanilla extract, and salt until smooth and evenly combined.
3. Line a tray or small baking sheet with parchment paper.
4. Arrange 8 Biscoff cookies on the tray to make the bottom layer.
5. Scoop and spread the Biscoff ice cream mixture evenly over each cookie.
6. Top with the remaining 8 cookies and press gently to form sandwiches.
7. Roll the exposed edges in crushed Biscoff cookies if desired.
8. Freeze the sandwiches for 3 to 4 hours, or until firm.

Notes
