Ingredients

2 ½ cups all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

1 cup unsalted butter

1 ½ cups granulated sugar

4 large eggs

2 teaspoons vanilla extract

1 cup whole milk

1 cup Biscoff spread

3 cups powdered sugar

2 to 3 tablespoons heavy cream

3 tablespoons Biscoff spread (for drizzle)

½ cup crushed Biscoff cookies (for topping)


Instructions

1. Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.

2. In a medium bowl, whisk together all-purpose flour, baking powder, and salt.

3. In a large mixing bowl, beat unsalted butter and granulated sugar until light and fluffy (about 3 minutes).

4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.

5. Alternate adding flour mixture and milk, beginning and ending with flour. Mix until just combined.

6. Divide batter evenly into pans and bake for 25–28 minutes, until a toothpick comes out clean. Cool completely.

7. For frosting: beat unsalted butter until creamy. Add Biscoff spread and beat well.

8. Gradually mix in powdered sugar. Add heavy cream and beat until light and fluffy.

9. Assemble cake: layer cakes with frosting between each layer. Frost the top and sides.

10. Microwave Biscoff spread for 10–15 seconds. Drizzle over cake and sprinkle with crushed Biscoff cookies.

Notes

Be sure cakes are fully cooled before frosting to avoid melting.

For a taller cake, use 6-inch pans and stack higher layers.

You can make the cake layers a day ahead and frost the next day.
