Description

This Biscoff Banana Bread is a soft, moist, and flavor-packed loaf with ripe bananas, warm cookie butter swirl, and cozy cinnamon sweetness in every slice. It is an easy recipe for quick breakfast, sweet brunch, healthy-ish snack, dessert ideas, breakfast ideas, and simple food ideas when you want something homemade, rich, and comforting without complicated steps.

Ingredients

1 1/2 cups mashed ripe bananas

1/2 cup Biscoff cookie butter spread

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup brown sugar

1/4 cup granulated sugar

2 large eggs

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

1/3 cup sour cream or plain Greek yogurt

1/3 cup crushed Biscoff cookies, optional for topping

Instructions

1. Preheat the oven to 350°F. Grease a 9×5-inch loaf pan and line it with parchment paper.

2. Mash the ripe bananas in a large bowl until mostly smooth.

3. Whisk in the melted butter, brown sugar, granulated sugar, eggs, vanilla extract, and sour cream until well combined.

4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.

5. Fold the dry ingredients into the banana mixture just until no flour streaks remain.

6. Warm the Biscoff spread for a few seconds until it is soft enough to drizzle.

7. Spoon half of the batter into the loaf pan, drizzle with part of the Biscoff spread, then add the remaining batter.

8. Drizzle the rest of the Biscoff spread on top and gently swirl it with a butter knife.

9. Sprinkle crushed Biscoff cookies over the top if using.

10. Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.

11. Cool in the pan for 15 minutes, then transfer to a wire rack and cool completely before slicing.

Notes

Use very ripe bananas with brown spots for the best sweetness, moisture, and banana flavor.

Warm the Biscoff spread just enough to loosen it, but do not make it hot or it may sink too much into the batter.

Let the loaf cool completely before slicing so the swirl sets and the bread cuts neatly.
