Ingredients

3 pounds sweet potatoes

4 tablespoons unsalted butter

1/4 cup heavy cream

1 1/2 tablespoons maple syrup

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

Instructions

1. Preheat the oven to 400°F. Wash and dry the sweet potatoes, then prick them with a fork and place on a lined baking sheet.

2. Roast the sweet potatoes for 45 to 60 minutes, or until tender and caramelized on the edges.

3. Let the sweet potatoes cool slightly, then slice and scoop the flesh into a large bowl.

4. Mash the sweet potatoes using a masher or fork until smooth.

5. Add butter to the warm mash and stir until melted and combined.

6. Stir in the cream, maple syrup, cinnamon, and salt. Mix well and adjust to taste.

7. Serve warm with an extra pat of butter or a sprinkle of flaky salt if desired.

Notes

Roasting, not boiling, gives a deeper flavor and creamier texture.

Use unsalted butter to control the seasoning better.

If the mash is too thick, add a splash more cream to loosen it up.
