Ingredients
1/2 cup unsalted butter
2 cloves garlic, minced
1 cup heavy cream
1 1/2 cups freshly grated parmesan cheese
1/4 teaspoon salt
1/4 teaspoon ground black pepper
Instructions
1. In a large saucepan over medium heat, melt 1/2 cup (1 stick) of unsalted butter until fully liquid and slightly foamy.
2. Add 2 minced garlic cloves to the melted butter. Cook for 1 minute, stirring constantly, until fragrant but not browned.
3. Pour in 1 cup of heavy cream. Stir constantly and bring the mixture to a gentle simmer. Let it bubble softly for 4–5 minutes to thicken slightly.
4. Reduce heat to low and stir in 1 1/2 cups of freshly grated parmesan cheese. Stir continuously until melted and the sauce becomes smooth and glossy.
5. Add 1/4 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Stir and taste. Adjust seasoning if needed.
6. Serve immediately over warm pasta or protein of choice.
Notes
Use only freshly grated parmesan for the best texture and flavor.
Don’t let the garlic brown or it will taste bitter.
To thin the sauce after refrigeration, gently reheat with a splash of cream or milk.
