1 tablespoon olive oil

1/2 teaspoon garlic powder

1/2 teaspoon ground cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup salsa

1/2 cup plain Greek yogurt

2 tablespoons chopped cilantro


Instructions

1. Heat a large skillet over medium heat and cook the turkey sausage until browned and fully cooked, breaking it into crumbles as it cooks. Transfer to a plate and set aside.

2. Add the olive oil to the same skillet, then cook the diced onion and bell pepper until softened and fragrant.

3. Stir in the black beans, garlic powder, cumin, salt, and black pepper, and cook for 1 to 2 minutes until warmed through.

4. In a bowl, whisk together the eggs and egg whites until fully combined.

5. Pour the egg mixture into the skillet and cook over low to medium-low heat, stirring gently until the eggs are softly scrambled and just set.
