Ingredients

200g flank steak, thinly sliced

200g fresh lo mein noodles or egg noodles

1 tablespoon light soy sauce

1 tablespoon dark soy sauce

1 tablespoon oyster sauce

1 teaspoon hoisin sauce

1/2 teaspoon sugar

1 teaspoon sesame oil

1 tablespoon cornstarch

2 tablespoons vegetable oil

1/2 cup sliced red bell pepper

1/2 cup sliced green bell pepper

1/2 cup shredded cabbage

1/2 cup sliced carrots

3 green onions, chopped

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

Splash of water (for sauce loosening)


Instructions

1. Slice the flank steak thinly against the grain and marinate it with light soy sauce, cornstarch, and a bit of sesame oil. Let it rest for at least 10 minutes.

2. In a small bowl, whisk together dark soy sauce, light soy sauce, oyster sauce, hoisin sauce, sugar, sesame oil, and a splash of water to make the sauce.

3. Boil the noodles until just tender, then drain and rinse with cold water. Toss with a little sesame oil to prevent sticking.

4. Heat oil in a wok over high heat. Add the beef and sear it quickly until browned. Remove and set aside.

5. In the same pan, sauté garlic and ginger until fragrant. Add bell peppers, cabbage, carrots, and green onions. Stir-fry until just crisp-tender.

6. Add the noodles and sauce to the pan, toss well to coat. Return the beef and stir-fry everything together until hot and glossy.

7. Serve immediately with extra green onions or chili oil if desired.

Notes

Slice the beef thinly across the grain for maximum tenderness.
