Ingredients

12 large egg whites

1 1/2 teaspoons cream of tartar

1/4 teaspoon salt

1 1/2 cups superfine sugar

1 cup cake flour

1/3 cup freeze-dried strawberries, finely ground

1 1/2 teaspoons vanilla extract


Instructions

1. Preheat your oven to 350°F and make sure your tube pan is clean, dry, and ungreased.

2. Sift together the cake flour, ground freeze-dried strawberries, and half of the sugar three times.

3. In a large bowl, beat egg whites until foamy. Add cream of tartar and salt, then continue beating until soft peaks form.

4. Gradually add remaining sugar to the egg whites and beat until stiff peaks form. Add vanilla and mix until combined.

5. Gently fold the dry mixture into the egg whites in three additions using a spatula, being careful not to deflate the batter.

6. Spoon the batter into the ungreased tube pan and smooth the top. Lightly tap the pan to remove large air bubbles.

7. Bake for 35-40 minutes, or until the top is golden and springs back when touched.

8. Invert the pan and let the cake cool completely upside down.

9. Once cooled, use a knife to loosen the sides and remove the cake from the pan.

Notes

Use only fresh egg whites for best volume and structure.

Do not grease the pan—this helps the cake climb and hold shape.

Cool the cake completely upside down to avoid collapse.
