Ingredients
2 pounds baby potatoes or Yukon gold potatoes cut into 1 inch chunks
3 tablespoons olive oil plus more for finishing if needed
4 cloves garlic finely minced
2 tablespoons fresh lemon juice
1 teaspoon finely grated lemon zest
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon crushed red pepper flakes or Aleppo pepper
1/2 teaspoon fine sea salt or to taste
1/4 teaspoon freshly ground black pepper
1/4 cup chopped fresh cilantro or flat leaf parsley plus more for serving
Instructions
1. Preheat the oven to 425°F and line a large baking sheet with parchment paper for easy cleanup.
2. Rinse the potatoes, cut them into 1 inch chunks, and place them in a pot of cold salted water.
3. Bring the pot to a boil, simmer for 5 to 7 minutes until the potatoes are just fork tender, then drain very well.
4. Spread the hot potatoes on the baking sheet and let them steam dry for a few minutes so the edges get rough and ready to crisp.
5. In a large bowl whisk together the olive oil, minced garlic, lemon juice, lemon zest, coriander, cumin, smoked paprika, red pepper flakes, salt, and black pepper.
6. Add the dried potatoes to the bowl and toss slowly but thoroughly until every piece is coated in the spicy lemon garlic oil.
7. Spread the potatoes back onto the baking sheet in a single layer with a little space around each piece.
8. Roast for 20 to 25 minutes, flipping once halfway through, until deeply golden and crispy on the edges.
9. Transfer the hot potatoes to a serving bowl and toss with the chopped cilantro or parsley, taste, and adjust salt or lemon to your liking.
10. Serve Batata Harra immediately while the potatoes are crisp with extra herbs and lemon wedges on the side.
Notes
For extra crispy edges let the potatoes steam dry after boiling and make sure the baking sheet is not overcrowded.
Adjust the chili flakes up or down depending on how spicy you like your Batata Harra and remember the heat will mellow slightly as the potatoes cool.
