Ingredients

8 ounces spaghetti

1 pound shrimp, peeled and deveined

1 tablespoon olive oil

2 cloves garlic, minced

1/2 cup mayonnaise

1/4 cup Thai sweet chili sauce

1–2 tablespoons sriracha (to taste)

2 tablespoons chopped green onions

Salt and black pepper to taste


Instructions

1. Cook the spaghetti in salted boiling water until al dente, then drain and reserve some pasta water.

2. In a large nonstick skillet, heat olive oil and sauté the shrimp for 1-2 minutes per side until pink and opaque.

3. Add garlic to the shrimp and cook until fragrant, about 30 seconds.

4. In a small bowl, whisk together the mayonnaise, Thai sweet chili sauce, and sriracha until smooth.

5. Add the cooked pasta to the skillet, then pour in the sauce and toss to coat. Use reserved pasta water to thin the sauce if needed.

6. Season with salt and pepper, garnish with chopped green onions, and serve immediately.

Notes

Make sure the shrimp are fully thawed and patted dry before cooking to avoid watering down the sauce.

Don’t overcook the garlic—add it after the shrimp has mostly cooked to prevent bitterness.
