Ingredients
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon maple syrup
1 teaspoon Dijon mustard
1 clove garlic, minced
1/2 cup chopped pecans
2 Honeycrisp apples, thinly sliced
1/4 red onion, thinly sliced
1/2 cup feta cheese, crumbled
5 cups mixed greens
1/3 cup dried cranberries
Salt and pepper, to taste
Instructions
1. In a small bowl or jar, whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, and garlic. Season with salt and pepper to taste. Set aside.
2. In a dry skillet over medium heat, toast pecans for 3–5 minutes, stirring often until fragrant and slightly golden. Let cool.
3. Slice the apples and red onion. Crumble the feta cheese. Set out the greens and cranberries.
4. In a large bowl or platter, layer the mixed greens, apples, onion, cranberries, and pecans. Top with crumbled feta.
5. Drizzle the maple-Dijon vinaigrette over the salad just before serving. Gently toss to combine.
