Ingredients

2 1/2 pounds chicken pieces

2 tablespoons Jamaican curry powder

1 teaspoon allspice

1 1/2 teaspoons salt

1/2 teaspoon black pepper

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

4 green onions, chopped

1 medium onion, sliced

4 sprigs fresh thyme

1/2 Scotch bonnet pepper, chopped

2 tablespoons vegetable oil

2 medium potatoes, peeled and chopped

1 medium carrot, sliced

2 cups chicken stock

1 tablespoon extra curry powder for burning the curry


Instructions

1. Clean the chicken pieces, pat them dry, and place them in a large bowl.

2. Season the chicken with 2 tablespoons Jamaican curry powder, allspice, salt, black pepper, garlic, ginger, green onions, onion, thyme, and Scotch bonnet pepper. Mix well and let it marinate for at least 30 minutes, or longer for deeper flavor.

3. Heat the vegetable oil in a large heavy pot over medium heat.

4. Add 1 tablespoon extra curry powder to the hot oil and stir for about 20 to 30 seconds until fragrant and slightly darkened.

5. Add the seasoned chicken to the pot and stir well to coat it in the curry oil. Brown the chicken for 6 to 8 minutes, turning occasionally.

6. Add the potatoes and carrot, then pour in the chicken stock. Stir everything together well.

7. Bring the pot to a gentle boil, then reduce the heat to low and cover.

8. Simmer for 30 to 40 minutes, stirring occasionally, until the chicken is tender and the potatoes are soft.

9. Remove the lid and cook for a few more minutes if needed to thicken the gravy to your liking.

10. Taste and adjust the seasoning, then serve hot with rice, rice and peas, or roti.

Notes

For the best flavor, let the chicken marinate longer if you have time, even up to overnight in the fridge.

Scotch bonnet pepper adds authentic heat, but you can use less if you want a milder curry.

Bone-in chicken gives the richest gravy and the most traditional flavor for this dish.
