Ingredients
2 pounds starchy potatoes
1 small yellow onion
2 large eggs
1 teaspoon salt
1/2 teaspoon black pepper
1/3 cup neutral oil for frying
Instructions
1. Peel and grate the potatoes and onion using the coarse side of a box grater.
2. Place the grated mix into a clean kitchen towel and wring out as much moisture as possible.
3. Transfer to a large bowl. Add the eggs, salt, and pepper. Mix thoroughly until well combined.
4. Heat oil in a large skillet over medium-high heat until shimmering.
5. Drop 1/4 cup of the mixture into the pan per pancake. Flatten each with the back of a spoon.
