Ingredients

2 cans apricot halves in light syrup (15 oz each)

2 tablespoons granulated sugar

1 tablespoon all-purpose flour

1 teaspoon ground cinnamon

1 pinch ground nutmeg

1 cup all-purpose flour

1/4 cup granulated sugar

1 1/2 teaspoons baking powder

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

6 tablespoons cold unsalted butter, cubed

1/3 cup milk

1 tablespoon coarse sugar for topping


Instructions

1. Preheat oven to 375°F (190°C).

2. Drain the apricots, reserving 1/4 cup of the syrup.

3. In a bowl, mix apricots with reserved syrup, 2 tablespoons sugar, 1 tablespoon flour, cinnamon, and nutmeg. Spread in a 9-inch ceramic baking dish.

4. In another bowl, whisk 1 cup flour, 1/4 cup sugar, baking powder, salt, and 1/2 teaspoon cinnamon.

5. Cut cold butter into the flour mixture using a pastry cutter or fingers until crumbly.

6. Add milk and stir just until a sticky dough forms.

7. Drop spoonfuls of dough over the apricots without spreading.

8. Sprinkle with coarse sugar.

9. Bake for 35-40 minutes or until golden and bubbling.

10. Let cool for 10 minutes before serving.

Notes

Use ceramic baking dish for best heat distribution and texture.
