Ingredients
1 and 1/2 cups graham cracker crumbs
2 tablespoons brown sugar
5 tablespoons melted butter
4 large Granny Smith apples, peeled and sliced
2 tablespoons sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon butter (for sautéing apples)
24 ounces full-fat cream cheese, softened
1 cup sugar
3/4 cup sour cream
3 large eggs
2 teaspoons vanilla extract
3/4 cup old-fashioned oats
1/2 cup all-purpose flour
1/2 cup brown sugar
1/2 teaspoon cinnamon
6 tablespoons melted butter
Instructions
1. Preheat oven to 350°F. Mix graham cracker crumbs, brown sugar, and melted butter. Press into a 9-inch springform pan and bake for 10 minutes. Let cool.
2. Cook apples in butter with sugar, cinnamon, and nutmeg for 10-15 minutes until tender. Let them cool.
3. Beat cream cheese until smooth. Mix in sugar and sour cream. Add eggs one at a time, then stir in vanilla extract.
4. Pour cheesecake batter over cooled crust. Spread cooked apples over the batter.
5. Mix oats, flour, brown sugar, cinnamon, and melted butter until crumbly. Sprinkle over apples.
6. Lower oven to 325°F. Bake for 60-70 minutes until mostly set. Let cool in oven 1 hour, then chill at least 6 hours before serving.
Notes
Use full-fat cream cheese for best texture—low-fat versions won’t set properly.
Let the apples cool completely before layering them on the batter to prevent sinking.
If topping browns too quickly, tent loosely with foil for the last 15–20 minutes.
