Ingredients

6 cups cubed day-old brioche or challah bread

4 large eggs

1 and 1/2 cups whole milk

1 teaspoon vanilla extract

1 and 1/2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

2 medium Granny Smith apples peeled and diced

2 tablespoons brown sugar

1 tablespoon lemon juice

2 tablespoons unsalted butter cut into small cubes

Powdered sugar for serving optional

Maple syrup for drizzling optional


Instructions

1. Cut the bread into 1-inch cubes and let it dry out overnight or toast lightly.

2. In a large bowl, whisk together the eggs, milk, vanilla, cinnamon, nutmeg, and salt.

3. Add the bread cubes to the bowl and gently toss to coat with the custard.

4. Toss the diced apples with lemon juice, cinnamon, and brown sugar.

5. Mix most of the apples into the bread mixture, reserving some for topping.

6. Grease a ceramic or glass baking dish with butter.

7. Pour the mixture into the dish and press down lightly to even the top.

8. Sprinkle remaining apples on top and dot with small butter cubes.

9. Cover and refrigerate for at least 4 hours or overnight.

10. Preheat oven to 350°F. Remove the casserole from the fridge and let it sit while oven heats.

11. Bake uncovered for 45–55 minutes, until golden and the center is set.

12. Let cool for 10 minutes before serving. Dust with powdered sugar and drizzle with maple syrup if desired.

Notes

Use day-old bread or lightly toast fresh bread so it absorbs the custard without becoming soggy.

Don’t skip the chill time—overnight soaking helps create a creamy texture.
