Ingredients
1 baguette
2 tablespoons olive oil
2 apples, peeled and diced
1/2 cup fresh cranberries
2 tablespoons maple syrup
1 tablespoon apple cider vinegar
1/4 teaspoon cinnamon
Pinch of clove
1/2 cup goat cheese or ricotta
1 tablespoon chopped chives or fresh rosemary
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F and slice the baguette on a diagonal, about 1/2 inch thick.
2. Brush slices lightly with olive oil and toast on a metal baking sheet for 8–10 minutes, flipping halfway.
3. In a saucepan, combine apples, cranberries, maple syrup, vinegar, cinnamon, and clove. Simmer for 15 minutes until soft and thickened. Cool completely.
4. Whip goat cheese slightly or drain ricotta if needed. Season lightly with salt and pepper if desired.
5. Spread cheese on each toasted slice. Top with a spoonful of apple chutney and garnish with chives or rosemary.
6. Serve immediately or within an hour for best texture.
