Ingredients

1 pound ground beef

3 medium Yukon gold potatoes, thinly sliced

1 yellow onion, chopped

1 can (10.5 oz) cream of mushroom soup

1 cup corn (fresh, canned, or frozen)

1 1/2 cups shredded cheddar cheese

1/2 cup whole milk

2 tablespoons butter

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. In a large skillet over medium heat, cook ground beef until browned and cooked through. Drain excess fat and set aside.

2. In the same skillet, add butter and sauté chopped onion until soft and translucent, about 5 minutes.

3. In a bowl, mix cream of mushroom soup with milk until smooth.

4. Grease a 9×13” baking dish. Layer half the potatoes, half the beef, half the onions, half the corn, and half the soup mixture. Repeat the layers.

5. Sprinkle cheddar cheese evenly over the top.

6. Cover with foil and bake at 375°F for 45 minutes. Remove foil and bake another 15 minutes until golden and bubbly.

7. Let it rest for 10 minutes before serving.

Notes

Use a mandoline slicer to get evenly thin potatoes for perfect tenderness.

You can substitute cream of chicken soup if preferred.

Add a sprinkle of paprika or herbs on top before baking for added flavor.
