Ingredients

1 pound ground breakfast sausage

1 pound rotini or cavatappi pasta

1 medium yellow onion, diced

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

4 large eggs

1 1/2 cups heavy cream

1 teaspoon garlic powder

1/2 teaspoon black pepper

Salt to taste

Cooking spray or butter for greasing


Instructions

1. Boil the pasta until one minute less than al dente. Drain and set aside.

2. Brown the sausage in a skillet over medium heat. Once partially cooked, add diced onion and sauté until sausage is browned and onion is translucent.

3. In a large bowl, whisk together eggs, heavy cream, garlic powder, black pepper, and salt. Stir in two-thirds of the cheddar and all of the mozzarella.

4. Add the cooked pasta and sausage-onion mixture to the bowl and fold until evenly coated.

5. Grease a 9×13-inch baking dish and pour in the mixture. Smooth out evenly and top with remaining cheddar.

6. Bake at 375°F uncovered for 30-35 minutes until bubbly and golden.

7. Optional: Broil on high for 2-3 minutes for a deeply browned cheesy crust.

8. Let rest 10 minutes before serving.
