2 tablespoons butter

1 medium onion, diced

2 carrots, peeled and diced

2 celery stalks, diced

3 garlic cloves, minced

4 medium Yukon Gold potatoes, peeled and diced

4 cups chicken broth

2 cups milk

1 cup heavy cream

3 tablespoons all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

1 cup shredded cheddar cheese

2 tablespoons fresh parsley, chopped


Instructions

1. Melt the butter in a large pot over medium heat. Add the onion, carrots, and celery, then cook until softened. Stir in the garlic and cook for 30 seconds.

2. Add the diced potatoes, chicken broth, salt, black pepper, and dried thyme. Bring to a gentle boil, then reduce the heat and simmer for 15 to 20 minutes until the potatoes are tender.

3. In a bowl, whisk the milk and flour together until smooth. Slowly pour the mixture into the soup, stirring well.

4. Stir in the heavy cream and cook for 5 minutes over low heat until the soup thickens slightly.

Notes

Cut the potatoes into even pieces so they cook at the same rate and give the soup a better texture.
