Ingredients
3 pounds Yukon Gold potatoes, peeled and cut into bite-size pieces
4 large hard-boiled eggs, chopped
1 cup mayonnaise
2 tablespoons yellow mustard
2 tablespoons apple cider vinegar
3 tablespoons granulated sugar
1/2 cup celery, finely diced
1/3 cup yellow onion, finely diced
1/3 cup sweet pickle relish, drained
1/2 teaspoon celery seed
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika, optional for topping
Instructions
1. Add the potatoes to a large pot and cover with cold water. Salt the water lightly, bring to a boil, and cook for 10 to 15 minutes, or until fork-tender.
2. Drain the potatoes well and let them cool for several minutes so they are warm but not steaming hot.
3. In a large bowl, whisk together the mayonnaise, yellow mustard, apple cider vinegar, sugar, celery seed, salt, and black pepper until smooth.
4. Add the cooked potatoes, chopped hard-boiled eggs, celery, onion, and sweet pickle relish to the bowl.
5. Fold gently until everything is evenly coated, keeping some potato chunks intact.
6. Cover and refrigerate for at least 2 hours before serving.
7. Stir gently before serving, taste, adjust seasoning if needed, and sprinkle with paprika if desired.
Notes
Use Yukon Gold or red potatoes for the best texture because they stay creamy without turning mushy.
Let the salad chill for at least 2 hours so the dressing can soak into the potatoes and develop better flavor.
