Ingredients
2 pounds ground beef
1 cup breadcrumbs
1 cup whole milk
2 large eggs
1 cup finely chopped onion
1 teaspoon salt
1 teaspoon black pepper
1 cup ketchup divided
1/2 cup brown sugar
1 tablespoon yellow mustard
Instructions
1. Preheat oven to 350°F and lightly grease a loaf pan.
2. In a large bowl combine ground beef, breadcrumbs, milk, eggs, chopped onion, salt, black pepper, and 1/2 cup of the ketchup. Mix gently until just combined.
3. Transfer mixture into the loaf pan and shape evenly.
4. In a small bowl mix the remaining 1/2 cup ketchup, brown sugar, and yellow mustard until smooth.
5. Spread glaze evenly over the top of the meatloaf.
6. Bake uncovered for 60 minutes or until internal temperature reaches 160°F.
7. Let rest for 10 minutes before slicing into 8 even slices and serving.
Notes
Do not overmix the meat mixture to keep the texture tender.
Use 80/20 ground beef for best moisture and flavor.
Allow the meatloaf to rest before slicing to prevent crumbling.
