Ingredients
4 medium russet potatoes
1 tablespoon olive oil
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
2 tablespoons butter
1/4 cup sour cream
1/2 cup shredded cheddar cheese
2 tablespoons chopped chives or green onions
Instructions
1. Scrub the potatoes well under running water, then pat them completely dry.
2. Poke each potato several times with a fork on all sides.
3. Rub the potatoes with olive oil, then season with kosher salt, black pepper, and garlic powder.
4. Place the potatoes in the air fryer basket in a single layer with space between them.
5. Air fry at 400°F for 35 to 45 minutes, flipping halfway through, until the centers are tender.
6. Let the potatoes rest for 2 minutes, then slice open and fluff the insides with a fork.
7. Add butter, sour cream, cheddar cheese, and chives or green onions. Serve warm.
Notes
Choose medium russet potatoes that are close in size so they cook evenly.
Do not wrap the potatoes in foil because the air fryer needs direct heat circulation to crisp the skin.
If your potatoes are extra large, add 5 to 10 more minutes and test the center with a knife before serving.
