Ingredients
1 tablespoon oil
1 medium onion, diced
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 teaspoon ground cumin
2 medium sweet potatoes, peeled and diced
1 can (14.5 oz) crushed tomatoes
4 cups vegetable broth
1/2 cup smooth unsweetened peanut butter
4 cups chopped kale or spinach
Salt and pepper to taste
Optional: cayenne pepper for heat
Instructions
1. Heat oil in a large pot over medium heat and sauté the onion until soft.
2. Add garlic and ginger; cook until fragrant.
3. Stir in cumin, then add sweet potatoes and sauté for 2-3 minutes.
