Ingredients

6 chicken thighs, bone-in and skin-on

2 tablespoons vegetable oil

1 large onion, chopped

3 garlic cloves, minced

1 tablespoon fresh ginger, grated

2 tablespoons curry powder

1/4 teaspoon cayenne pepper

2 tablespoons tomato paste

1/3 cup peanut butter

1 cup full-fat coconut milk

1/2 cup chicken stock

Salt and pepper to taste

Fresh cilantro or crushed peanuts for garnish (optional)


Instructions

1. Season chicken thighs with salt and pepper.

2. Heat oil in a large Dutch oven over medium heat. Sear chicken thighs skin-side down until golden brown. Remove and set aside.

3. In the same pot, cook chopped onions until softened. Add garlic and ginger, cook until fragrant.

4. Add curry powder and cayenne pepper. Toast spices briefly in the oil.

5. Stir in tomato paste and peanut butter. Mix until smooth.

6. Pour in coconut milk and chicken stock. Stir to combine.

7. Return chicken to the pot, cover, and simmer for 30–40 minutes.

8. Uncover and simmer for 10 more minutes to thicken sauce.

9. Taste and adjust seasoning. Serve hot, garnished if desired.
